Bethe turned me onto this blog, Fatfree Vegan Kitchen and I’ve so far tried two recipes from it. The lunchbox Enchilada Casserole and the Pink Bean, Quinoa and Spinach Soup from Vegan Express.
Now, I’m not a vegetarian or a vegan but I do want to eat healthier and try some new things.
I had to post about this because the soup was SO GOOD. Marianne got me interested in the quinoa stuff and I had to give it a try.
So here is a picture of the soup. It was easy to make, has great ingredients and is surprisingly tasty. I am loving taking it to work for leftovers too.

I’m totally on the quinoa bandwagon.

Hm interesting. It looks like South American cous-cous or something. I’ll have to check it out!
